摘要
本文采用超高效液相色谱-质谱联用法(Ultra Performance Liquid Chromatography-Mass Spectrometry-Mass Spectrometry,UPLC-MS/MS)同时测定酱香型白酒原辅料(高粱和大曲)中的5种非挥发性酚酸(原儿茶酸、对香豆酸、绿原酸、咖啡酸和阿魏酸)。结果显示,利用外标法建立的标准曲线线性关系较好,相关系数(R2)均高于0.995,精密度在0.6%~6.3%,回收率在94.2%~108.1%,准确度在-5.8%~8.1%。该方法操作简单、结果稳定性好、检测数据可靠,可用于酱香型白酒原辅料中非挥发性酚酸含量的测定。
Five non-volatile phenolic acids(protocatechuic acid,p-coumaric acid,chlorogenic acid,caffeic acid and ferulic acid)in the raw materials and excipients of Jiangxiangxing Baijiu(sorghum and Daqu)were simultaneously determined by ultra performance liquid chromatography-mass spectrometry-mass spectrometry(UPLC-MS/MS).The results showed that the standard curve established using the external standard method had a good linear relationship,with correlation coefficients(R2)higher than 0.995,precision ranging from 0.6%to 6.3%,recovery ranging from 94.2%to 108.1%,and accuracy ranging from-5.8%to 8.1%.The method is simple,stable and reliable,and can be used to determine the content of nonvolatile phenolic acids in the raw and auxiliary materials of Jiangxiangxing Baijiu.
