摘要
对不同年份闽派红曲黄酒中的微量元素进行测定分析,对其酒精度、总糖、氧化钙、pH值、氨基酸态氮等理化性质的变化规律进行研究,以期为年份黄酒的品质控制及新产品研究开发提供借鉴参考。采用电感耦合等离子体质谱法(ICP-MS)测定闽派红曲黄酒中15种微量元素的含量,亚铁氰化钾滴定法测定总糖,原子吸收分光光度法测定氧化钙,滴定法测定氨基酸态氮,酒精计法测定酒精度,酸度计测定pH值。结果表明,闽派红曲黄酒中含有较丰富的Mg、Ca、Zn等元素,基本未检出有害重金属元素;随着储存年份的增加,酒精度逐年下降,由16.13%vol下降至14.28%vol,总糖含量呈上升趋势,由19.3 g/L增加至27.4 g/L,氧化钙的含量稳定在0.10 g/L左右,pH值由4.15下降至3.88,氨基酸态氮的含量在前三年内增加至1.20 g/L而后下降至0.85 g/L。闽派红曲黄酒中含有较丰富的矿物质元素,且有害重金属的检验结果均符合国家相关标准规定,黄酒的酒精度、pH值、总糖、氨基酸态氮等理化特性都在一定程度上受到黄酒贮存年份的影响。
The trace elements in Fujian Hongqu Huangjiu of different years were determined,and the change rules of the alcohol con-tent,total sugar,calcium oxide,pH value and amino acid nitrogen in Fujian Hongqu Huangjiu were analyzed,so as to provide refer-ence for quality control and new product development of Fujian Hongqu Huangjiu.The contents of 15 trace elements in Fujian Hon-gqu Huangjiu were determined by inductively coupled plasma mass spectrometry(ICP-MS),the total sugar was determined by potas-sium ferricyanide titration,the calcium oxide was determined by atomic absorption spectrophotometry,the amino acid nitrogen was determined by titration,the alcohol content was determined by alcohol meter,and the pH value was determined by acidity meter.The results showed that there were abundant Mg,Ca,and Zn in Fujian Hongqu Huangjiu,and no harmful heavy metal elements were de-tected.With the increase of storage years,the alcohol content decreased from 16.13%vol to 14.28%vol,the total sugar content in-creased from 19.3 g/L to 27.4 g/L,the calcium oxide content kept stable around 0.10 g/L,the pH value decreased from 4.15 to 3.88,and the content of amino acid nitrogen increased to 1.20 g/L in the first three years and then decreased to 0.85 g/L.In conclusion,Fu-jian Hongqu Huangjiu contains rich mineral elements,and the contents of harmful heavy metals are in line with relevant national stan-dards.The physicochemical properties of Huangjiu are affected to some extent by the storage year.
