摘要
南瓜籽作为一种传统的食药同源农产品,营养价值较高,含有脂肪酸、类胡萝卜素、生育酚、角鲨烯、矿物质等多种营养成分,过去常作为休闲零食被人们喜爱。近年来,因其抗癌、抗炎、降血脂等药理作用再度引起人们关注,其副产品也随之被开发,如南瓜籽油、南瓜籽粕等。通过综述南瓜籽的化学成分、药理活性及南瓜籽相关产品的开发利用,为南瓜籽新领域的应用及新产品的开发提供参考。
As a traditional food and medicine agricultural product,pumpkin seed are rich in nutritional value,containing fatty acids,carotenoids,tocopherols,squalene,minerals and many other nutrients.In the past,they were often enjoyed as a casual snack.However,they have attracted renewed attention for their anti-cancer,anti-inflammatory,blood lipid-lowering and other pharmacological effects now.Their by-products have been developed,such as pumpkin seed oil and pumpkin seed meal.The chemical composition,pharmacological activity,and the development and utilization of pumpkin seed products were reviewed,which provided a reference for the application of pumpkin seed in new fields and the development of new products.
