Introduction Nitrites,as a powerful kind of oxidizing agent,can oxidize ferrous ions(Fe^(2+))to ferric ions(Fe^(3+)),triggering the conversion of normal hemoglobin(Hb)to methemoglobin(MetHb),which loses its ability to carry oxygen,resulting in hypoxia in tissues and death in severe cases.
