摘要
为了提高水产类食品的冷冻保鲜品质,以鲫鱼为研究对象,研究均匀交变磁场对鲫鱼肉冷冻保鲜效果的影响.实验结果表明:相对于无磁场(对照组),合适的磁场(磁感应强度为2mT)能显著提升鲫鱼肉的保鲜效果.该文实验结果为水产类食品保鲜新方法提供了基础实验数据。
In order to improve the frozen preservation quality of aquatic food,the effect of uniform alternating magnetic field on the freezing and preservation of crucian carp meat was studied.The experimental results showed that compared with the case without application of magnetic field(control group),a suitable magnetic field(magnetic induction intensity of 2 mT)could significantly improve the freshness preservation of crucian carp meat.The experimental results in this paper provided basic experimental data for the new method of aquatic food preservation.
