黄曲霉毒素(AFs)是一种有害化合物,由黄曲霉属真菌产生,常存在于农产品中。长期摄入AFs会引发食物中毒,导致肝脏损伤、免疫系统受损以及癌症等。为了降低食品中的AFs含量,研究人员开展了各种脱毒技术的研究。脱毒技术主要包括物理处理、化学处理和生物技术。近年来,生物技术在AFs脱毒领域取得了重要进展。研究人员利用微生物、酶和其他生物体的代谢能力开发出高效的脱毒方法,这些方法具有选择性、高效和环境友好的特点,能够降低食品中AFs含量并保持食物品质。
Aflatoxins(AFs)are harmful compounds produced by Aspergillus flavus fungi and are commonly present in agricultural products.Long-term intake of AFs could cause food poisoning,liver damage,immunodeficiency and cancer.Researchers have studied various detoxification techniques to reduce AFs in food.The detoxification techniques mainly include physical treatment,chemical treatment,and biotechnology.In recent years,biotechnology has made significant progress in AFs detoxification.Researchers have developed highly efficient detoxification methods using the metabolic capacity of microorganisms,enzymes and other organisms.These detoxification processes are selective,efficient and environmentally friendly,which can reduce the levels of AFs in food and maintain food quality.
