摘要
为实现酱香型白酒酒醅中乳酸的快速检测,通过采集酱香型白酒酒醅中乳酸的近红外光谱信息,经数学求导、散射、平滑等光谱预处理方式,构建了酱香型白酒酒醅中乳酸近红外快速检测模型。结果表明,模型预测标准差(SEP)为0.054,线性回归斜率为0.986,相关系数(RSQ)为0.977。对不同样品的十次平行测定,相对标准偏差(RSD)在2.89%以内。说明预测模型稳定,准确度高,重复性较好。将该模型用于酱香型白酒酒醅中乳酸含量的检测,可在2 min内得出数据,检测效率得到显著提升。
In order to realize the rapid detection of lactic acid in the fermented grains of Jiangxiang Baijiu,a near-infrared model was constructed by collecting the near-infrared spectral information of lactic acid in the fermented grains of Jiangxiang Baijiu.Through spectral preprocessing methods such as mathematical derivation,scattering,and smoothing,the model was constructed.The results showed that the standard deviation of model prediction(SEP) was 0.054,the slope of linear regression was 0.986,and the correlation coefficient(RSQ) was 0.977.For ten parallel determinations of different samples,the relative standard deviation(RSD) was within2.89 %,indicating that the model was stable,with high accuracy and good repeatability.The model was used to detect the lactic acid content in the fermented grains of Jiangxiang Baijiu,and the data could be obtained within 2 minutes,which significantly improved the detection efficiency.
