不同杂交组合F_(1)代羊肉品质比较研究

摘要 本试验旨在研究不同杂交组合对F_(1)代羊屠宰性能及肉品质的影响。试验以湖羊为母本(♀),南丘羊、萨福克羊为父本(♂)分别进行杂交试验(纯繁湖羊F_(1)代作为对照组),比较分析湖羊F_(1)代、南湖F_(1)代、萨湖F_(1)代屠宰性能和肉品质。结果表明:萨湖羊的胴体重显著高于湖羊组和南湖羊组,分别提高了20.94%和19.6%(P<0.05);萨湖羊净肉重显著高于南湖羊和湖羊组(P<0.05);宰前活重和屠宰率在南湖、湖羊和萨湖之间差异均不显著(P>0.05);南湖羊的总灰分含量显著高于湖羊和萨湖羊(P<0.05);蛋白质、水分、钙、磷、胆固醇等含量在3个不同杂交组合之间差异均不显著(P>0.05);湖羊的肌肉亮度值较南湖和萨湖羊分别降低了30.03%和22.33%(P<0.05);红度(a^(*))和黄度(b^(*))值在3个不同杂交组合之间差异不显著(P>0.05);3个不同杂交组合中检测出了7种微量元素(镁、铁、铜、锌、硒、钠、钾),其含量差异均不显著(P>0.05)。试验结果表明,杂交后羊的屠宰性能、肌肉中营养成分、氨基酸等都较湖羊组而言有较好的优势,说明湖羊和南丘羊、萨福克羊的杂种优势明显,是理想的杂交组合,可以在生产中推广。 This experiment was conducted to study the effect of different cross combinations on slaughter performance and mutton quality of F_(1) sheep.Hu sheep(♀)was taken as the female parent,and Southdown sheep,and Suffolk sheep as male parents(♂)to carry out the hybridization experiments(F_(1) generation of pure breed Hu sheep was used as control group).The slaughter performance and mutton quality of Hu sheep F_(1),Southdown×Hu F_(1),and Suffolk×Hu F_(1) were compared.The results showed that the carcass weight of Suffolk×Hu was higher than that of Hu sheep and Southdown×Hu by 20.94%and 19.6%respectively(P<0.05).The net weight of Suffolk×Hu was significantly higher than Southdown×Hu and Hu sheep(P<0.05).There was no significant difference between Southdown×Hu,Hu sheep and Suffolk×Hu(P>0.05)in live weight before slaughter and slaughter rate.The total ash content in Southdown×Hu was significantly higher than that in Hu sheep and Suffolk×Hu(P<0.05).The contents of protein,water,calcium,phosphorus and cholesterol were not significantly different among the three crosses(P>0.05).Compared with Southdown and Suffolk×Hu,the muscle brightness of Hu sheep decreased by 30.03%and 22.33%(P<0.05).The redness(a^(*))and yellowness(b^(*))had no significant difference among the three crosses(P>0.05).Seven trace elements(Mg,Fe,Cu,Zn,Se,Na,K)were detected in three different cross combinations,and the difference was not significant(P>0.05).The results showed that the crossbred sheep are superior to Hu sheep in slaughter performance,nutritional components in muscle and amino acids.It reveals that Hu sheep,Southdown sheep and Suffolk sheep has obvious heterosis,which was an ideal cross combination and could be popularized in production.
