摘要
为提高真空冷冻干燥废弃卤虫的品质,通过单因素实验和正交实验设计,研究了不同质量分数海藻糖、甘露醇、蔗糖和精氨酸对废弃卤虫冻干保持原有营养成分的影响,确定适合废弃卤虫的最佳冻干保护剂配方。结果表明,4种物质的保护效果依次为海藻糖>甘露醇>蔗糖>精氨酸;最佳保护剂配方为20%海藻糖+15%蔗糖+8%甘露醇+2%精氨酸。加入冻干保护剂后,二十二碳六烯酸(DHA)含量为4.8 g/kg,二十碳五烯酸(EPA)含量为2.2 g/kg,维生素C含量为38.3 mg/kg,保存率均超过90%。
In order to improve the quality of vacuum freeze-drying end-of-life artemia,single factor experiment and orthogonal experiment design are adopted,the effects of trehalose,mannitol,sucrose and arginine contents on the preservation of physical properties and nutritional components of end-of-life artemia are studied.The optimum formulation of freeze-drying protectant for end-of-life artemia is determined.The results are as follows:the order of the influencing factors is trehalose mannitol sucrose arginine;the best cryoprotectants ingredient is 20%trehalose+15% sucrose+8% mannitol+2% arginine;after adding lyophilized protective agent,the content of DHA,EPA and Vitamin C is 4.8 g/kg,2.2 g/kg and 38.3 mg/kg,respectively,and the preservation rate are more than 90%.
