摘要
电子鼻因快速、无损、便捷的特点,已在食品安全保障发挥积极作用。本文综述了近五年电子鼻在新鲜度监控及货架期预测、农残检测、致病微生物及毒素检测、掺假及鉴伪检测、过敏原识别的应用,对比了其他检测手段,展示了与其他技术融合的情况,分析了存在问题,并展望了发展趋势。
Electronic nose has played an active role in food safety because of its fast,nondestructive,and convenient features.This paper reviews the application of electronic nose technology in food safety control in the past five years,including freshness monitoring and shelf life prediction,pesticide residue detection,pathogenic microorganism and toxin detection,adulteration and counterfeiting detection,as well as allergen identification.The integration of other detection methods is compared,existing problems are analyzed,and the development trend is prospected.
