茶多酚壳聚糖微胶囊的制备工艺研究

摘要 以茶多酚为芯材、壳聚糖为壁材,通过乳化交联法制备茶多酚壳聚糖微胶囊(GTP/CS-MC)。以包封率为指标,在单因素试验的基础上通过正交试验优化制备工艺,并研究微胶囊的粒径分布。结果表明:GTP/CS-MC的最佳制备工艺为反应时间2.0 h、反应温度50℃、茶多酚质量浓度4.8 mg/mL,在此条件下茶多酚的包封率达到80.91%±2.96%,GTP/CS-MC平均粒径为(8.721±0.16)μm,多分散系数为0.218±0.008,分散性良好。 Tea polyphenol chitosan microcapsules(GTP/CS-MC)were prepared by emulsion-crosslinking method using tea polyphenols as the core material and chitosan as the wall material.Using encapsulation efficiency as an indicator,the preparation process was optimized by orthogonal experiments based on single factor experiments,and the particle size distribution of the microcapsules was studied.The results showed that the optimal preparation process for GTP/CS-MC was reaction time 2.0 h,reaction temperature 50℃,and tea polyphenol mass concentration 4.8 mg/mL.Under these conditions,the encapsulation efficiency of tea polyphenols reached 80.91%±2.96%,and the average particle size of GTP/CSMC was(8.721±0.16)μm.The polydispersity coefficient was 0.218±0.008,indicating good dispersibility.
