摘要 麦芽(Hordei Fructus Germinatus)为禾本科植物大麦的成熟果实经发芽、干燥的炮制加工品,是一味常见的“药食同源”植物。麦芽主要含有多糖、酶、生物碱、维生素、氨基酸、蛋白质、黄酮、叶酸、酚类等多种化学成分,麦芽的功能活性为行气消食、健脾开胃、退乳消胀,具有抗氧化、抗肿瘤、抗炎、消食、降血糖、保肝护肝等药理作用,临床应用十分广泛。本文基于近年的国内外文献对麦芽的化学成分及功能活性进行整理综述,以期为麦芽更泛地应用于食品、药品、保健等领域提供依据,为麦芽的后续研究与开发提供参考。 Hordei Fructus Germinatus is a processed product after germination and drying of the mature fruits of barley,which is one Gramineae plant.As a common plant served as medicine and food,Hordei Fructus Germinatus mainly contains polysaccharides,enzymes,alkaloids,vitamins,amino acids,proteins,flavonoids,folic acid,phenols,and other chemical components.The functional activities of Hordei Fructus Germinatus are promoting qi and digestion,invigorating the spleen and appetizing,and relieving milk and swelling.It has pharmacological effects such as anti-oxidation,anti-tumor,anti-inflammatory,digestion,reducing blood sugar,and protecting the liver.It is widely used in clinical practice.Based on recent domestic and foreign literatures,this paper summarizes the chemical components and functional activities of Hordei Fructus Germinatus,in order to provide a basis for the wider application of Hordei Fructus Germinatus in food,medicine,health care and other fields,and provide a reference for the follow-up research and development.
