摘要
葛根是传统的药食两用植物,对葛根的营养保健价值以及在淀粉基食品中的应用现状进行综述,以期为今后葛根在淀粉基食品中的进一步应用提供参考。
Pueraria lobata is a traditional plant for both medicine and food.This article reviews the nutritional and health value of Pueraria lobata and its application in starch-based foods,with a view to providing reference for the further application of Pueraria lobata in starch-based foods in the future.
