壳聚糖-植酸复合涂膜对兰考蜜瓜保鲜效果的影响

摘要 为探究壳聚糖和植酸涂膜对兰考蜜瓜保鲜效果的影响,本试验以“玉兰香”哈密瓜为试验材料,采用2%壳聚糖、1%植酸和2%壳聚糖+1%植酸复合涂膜分别进行处理。结果表明,在贮藏过程中,壳聚糖-植酸复合涂膜保鲜效果表现最佳,贮藏至30 d时,复合涂膜组的硬度为8.16 kg·cm^(-2),比对照组提高了85.0%;且复合涂膜较单独涂膜能更好地延缓可溶性固形物含量、抗坏血酸含量的变化,使兰考蜜瓜维持较高的过氧化物酶和超氧化物歧化酶活性,抑制多酚氧化酶活性的增强,减少机体内丙二醛含量的累积,较好地保持果实品质。因此,壳聚糖-植酸复合涂膜能延缓兰考蜜瓜的衰老,增强抗性,提高耐藏性。 This work intends to explore the effects of chitosan and phytic acid composite film on preservation of Lankao melon.The“Yulanxiang”Hami melon was coated with 2%chitosan,1%phytic acid and 2%chitosan and 1%phytic acid composite film,respectively.The results showed that chitosan and phytic acid composite film had better preservation effect during storage.After 30 days,the hardness of Lankao melon with composite film was 8.16 kg·cm^(-2),which was 85.0%higher than the control group,and the compound coating film can better delay the changes of soluble solids content and ascorbic acid content than the single coating film,so that Lankao honeydew melon can maintain a higher activity of peroxidase and superoxide dismutase,inhibit the enhancement of polyphenol oxidase activity,reduce the accumulation of malondialdehyde content in the body,and better maintain the fruit quality.Therefore,the chitosan and phytic acid composite film could postpone the senescence process of Lankao melon,enhance resistance and improve storage tolerance.
