摘要
受新时代的宅经济和消费观念转变的影响,预制菜已迎来“风口期”,行业快速兴起。本文主要介绍了现代保鲜技术在畜禽肉类预制菜中的应用,包括相关食品添加剂的使用、气调包装技术、真空包装技术、辐照技术对畜禽肉类预制菜的保鲜作用。
Influenced by the new era of housing economy and changes in consumption concepts,prefabricated foods have ushered in a“tuyere period”and its industry is rapidly emerging.This review mainly introduces the application of modern preservation technology in prefabricated foods of livestock and poultry meat,including the use of relevant food additives,modified atmosphere packaging technology,vacuum packaging technology and irradiation technology on the preservation of prefabricated foods of livestock and poultry meat.
