基于动网格模型的人员走动对厨房流场影响研究

摘要 目的研究人员走动对厨房气流场及油烟颗粒物捕获的影响。方法以厨房烹饪过程为背景,应用动网格模型分析人员走动对厨房气流场的影响,选用RNG k-ε模型对厨房气流场模拟分析,运用拉格朗日离散模型跟踪颗粒物运动,采用动态网格法的层铺模型对运动产生的变形网格进行更新。结果当人员走动速度为0.5 m/s时,身体后方气流速度最大为0.84 m/s,人员运动6 s内PM_(1.0)、PM_(2.5)及PM_(10)的被捕获率分别为94.76%、94.85%和92.75%;走动速度为0.7 m/s时,气流速度最大为1.11 m/s,PM_(1.0)、PM_(2.5)及PM_(10)的被捕获率分别为89.51%、89.24%和84.09%;走动速度为1.0 m/s时,气流速度最大为1.52 m/s,PM_(1.0)、PM_(2.5)及PM_(10)的被捕获率分别为87.08%、86.58%和81.49%。结论人员走动使厨房内流场出现扰动现象,阻碍油烟颗粒物的捕获;人员走动速度越快,气流扰动越明显,油烟颗粒物越难捕获;扰动气流对PM_(1.0)、PM_(2.5)两种粒径颗粒物影响基本一致,大于对PM_(10)等大粒径颗粒物所受影响。 In order to investigate the effects of human walking on air flow field and smoke particle capture in the kitchen,the flow field in the kitchen was simulated by RNG k-εmodel based on dynamic mesh,and the Joseph-Louis Lagrange discrete model is used to track the particle motion.The computation domain is divided into dynamic grid area and static grid area,and the dynamic grid method is used to update the deformation grid because of movement.The simulation result shows that when the walking speed was 0.5 m/s,the maximum air flow velocity behind the body was 0.84 m/s.The capture rates of PM_(1.0),PM_(2.5)and PM_(10)in 6 seconds after human movement were 94.76%,94.85%and 92.75%,respectively.When the walking speed was 0.7 m/s,the maximum air flow velocity behind the body was 1.11 m/s.The capture rates of PM_(1.0),PM_(2.5)and PM_(10)were 89.51%,89.24%and 84.09%,respectively.When the walking speed was 1.0 m/s,the air flow velocity behind the body increased by 1.52 m/s,and the removal rates of PM_(1.0),PM_(2.5)and PM_(10)were 87.08%,86.58%and 81.49%,respectively.The flow field in the kitchen is disturbed by human movement,which hinders the discharge of fume particles.The faster the people move,the more obvious the disturbance of the air flow field is,and the more disadvantageous it is to the emission of fume particles.The disturbance of the air flow caused by the people moving has basically the same effect on PM_(1.0)and PM_(2.5)particles,and these effects are bigger than that of PM_(10)particles.
