沿海城市肉制品亚硝酸盐含量调查分析

摘要 目的:调查分析沿海城市肉制品亚硝酸盐含量情况,为相关部门制定食品安全监管政策提供科学依据,以确保消费者的食品安全。方法:采集沿海各城市肉制品样品共计200份,参考《食品安全国家标准食品中亚硝酸盐和硝酸盐的测定》(GB 5009.33—2016)对样品进行亚硝酸盐含量测定。结果:200份肉制品样品中的亚硝酸盐含量检测结果均大于检出限,且未超过国家规定的标准限量。60.50%(121/200)的肉制品亚硝酸盐含量在1.00~3.00 mg·kg^(-1),仅有1.50%(3/200)肉制品的亚硝酸盐含量超过13.00 mg·kg^(-1)。从肉制品类型方面分析,发现各类型肉制品中亚硝酸盐含量之间的差异无统计学意义(F=1.848,P>0.05)。从肉制品销售渠道方面分析,农贸市场与餐饮店肉制品中亚硝酸盐含量比较差异有统计学意义(F=36.928,P<0.05)。从肉制品采购城市方面分析发现,福州与烟台的肉制品亚硝酸盐含量比较差异有统计学意义(F=71.134,P<0.05)。11个沿海城市中有5个城市(大连、秦皇岛、烟台、连云港和北海)的肉制品亚硝酸盐含量低于沿海城市平均水平[(3.32±1.59)mg·kg^(-1)]。结论:沿海城市肉制品亚硝酸盐添加较普遍,但均未超标,建议加强农贸市场的熏煮香肠火腿制品的监管力度,以保障公众的食品安全。 Objective:To investigate and analyze the nitrite content of meat products in coastal cities,and provide scientific basis for relevant departments to formulate food safety regulatory policies to ensure consumer food safety.Method:A total of 200 meat product samples were collected from coastal cities,and the nitrite content of the samples was determined according to GB 5009.33—2016.Result:The nitrite content in 200 meat product samples was detected to be greater than the detection limit and did not exceed the national standard limit.60.50%(121/200)of meat products have nitrite content ranging from 1.00 mg·kg^(-1) to 3.00 mg·kg^(-1),while only 1.50%(3/200)of meat products have nitrite content exceeding 13.00 mg·kg^(-1).From the perspective of meat product types,it was found that there was no statistically significant difference in nitrite content among different types of meat products(F=1.848,P>0.05).From the perspective of sales channels of meat products,there is a statistically significant difference in the nitrite content in meat products between farmers’markets and restaurants(F=36.928,P<0.05).From the perspective of meat product procurement cities,it was found that there was a statistically significant difference in the nitrite content of meat products between Fuzhou and Yantai(F=71.134,P<0.05).Five out of 11 coastal cities(Dalian,Qinhuangdao,Yantai,Lianyungang,and Beihai)have lower nitrite content in meat products than the average level of coastal cities[(3.32±1.59)mg·kg^(-1)].Conclusion:The addition of nitrite to meat products in coastal cities is common,but it does not exceed the standard.It is recommended to strengthen the supervision of smoked and cooked sausage and ham products in agricultural markets to ensure public food safety.
