摘要
深挖思想政治教育资源,并融入食品专业的课程教学过程中,从而实现“教书育人,立德树人”的教学目标,这是“双一流”背景下应用型人才培养的根本任务和重要举措。以食品化学“酶促褐变”教学为例,通过在“提出问题、收集资料、讨论交流、归纳总结”的基于问题的学习(problem-based learning,PBL)过程中充分挖掘“酶促褐变”所蕴含的思政元素,导入酚-酚酶区域化分布学说、酶制剂应用的悠久历史、食品领域的生物安全问题等,结合基于知识水平能力和思想道德素质的课程考核,以期提升大学生的专业知识能力和思想道德水平,也为食品化学的思政教学提供一定借鉴。
Explore educational resources deeply and integrate it into the course teaching process of food major,further achieve the education purpose of “impart knowledge and educate people,and strengthen moral education and cultivate people”,which was the fundamental task and important measures of application talents training under the background of “firstrate universities and disciplines”.The teaching process of “enzymatic browning of fruits and vegetables” was investigated as an example,and the ideological and political elements of “enzymatic browning” were explored by means of “asking questions,collecting information,discussing and communicating,and summarizing”.In addition,the theory of “phenol-phenolase regionalized distribution”,the long history of enzyme application,and bio-safety issues in food field were raised in the PBL teaching mode.The test score should be considered with knowledge level and ideology and morality,to promote professional competence and ideological and moral level of college students,and to provide some references for food chemistry teaching with “course ideology and politics”.
