摘要
微波加热具有方便、快捷、易于控制等特点为人们所喜爱,微波解冻水产品也成为水产解冻的热门方式。为探究水产品的微波解冻情况,对冷冻鱼在微波场中的加热情况进行了仿真。文章采用多物理场仿真软件模拟微波炉解冻水产品,在输入功率1 000 W,电磁波模式TE10模,频率2.45 GHz情况下对一条冷冻鱼进行5 s的解冻,分析冷冻鱼的电场分布及温度分布。通过仿真结果得出,鱼的温度分布情况与鱼的电场分布情况相似,鱼所处位置高度的改变会影响鱼表面及内部的电场分布,随之会影响鱼的解冻效果。经过分析,将冷冻鱼置于25,100和125 mm高处时解冻效果更为显著。仿真结果为家用及工业用微波解冻水产品提供一定理论基础。
Microwave heating is popular for its convenience,speed and easy control.Microwave thawing of aquatic products has also become a popular way of thawing aquatic products.To investigate the microwave thawing of aquatic products,the heating of frozen fish in microwave field is simulated.In this paper,multiple physical field simulation software is used to simulate the thawing of aquatic products by microwave oven.A frozen fish is thawed for 5 s under the input power of 1 000 W,electromagnetic wave mode TE10 mode and frequency 2.45 GHz,and the electric field and temperature distribution of frozen fish are analyzed.The simulation results show that the temperature distribution of fish is similar to the electric field distribution of fish,and the change of the height of fish will affect the electric field distribution on the surface and inside of fish,and then affect the thawing effect of fish.The thawing effect of frozen fish at 25,100 and 125 mm height is more significant.The simulation results provide a theoretical basis for the microwave thawing of aquatic products for domestic and industrial use.
