摘要
米制品是我国主食的主要组成部分,其美味又营养的特性深受广大消费者喜爱,但其容易老化的特点也制约了其发展。分析了米制品老化机制,从原料选择、原料处理、添加物质等方面探讨了抗老化方法。
Rice products are the main components of staple food in China.Their delicious and nutritious properties are popular among consumers,but their aging characteristics restrict their development.In this paper,the aging mechanism of rice products was analyzed,and the anti-aging methods were discussed from the aspects of raw material selection,raw material treatment and material addition.
