摘要
肉品质快速、简便检测新技术开发具有重要的现实意义。电子舌是一种模仿生物味觉的新型快速智能检测系统,具备操作程序简单,结果客观、重复性好等优点,现已广泛应用于食品品质快速分析的基础研究。通过综述电子舌在肉及肉制品新鲜度评定、风味分析、品质评价、掺伪检测和卫生监测等方面的应用。展望电子舌在肉品质快速检测中的研究趋势,以期为智能仿生传感在肉品质控制中的应用研究提供参考。
It is of great practical significance to develop new technology for fast,simple meat quality assessment.Electronic tongue is a new artificial intelligence sensory evaluation and nondestructive detection system that simulates natural biosensors.It is simple,objective and good repeatability,and has been widely used in food quality detection.It also summarized the application of electronic tongue system in meat products freshness,flavor analysis,quality evaluation,adulteration detection and health monitoring of meat and meat products.In addition,the development trend of electronic tongue system in quality detection of meat products was prospected,which provided reference for application of intelligent bionic sensor in meat quality control.
