摘要
酸性电解水作为一种安全、有效、环保型消毒剂,其在食品行业的应用非常广泛。本研究介绍了酸性电解水的生成条件及相关特性,系统阐述了酸性电解水在食材、食饮具和食品加工器具、从业者、其他物品和环境等食品行业方面清洗消毒的可行性、具体方法及注意事项,归纳总结了酸性电解水生成装置的相关标准,为酸性电解水在食品行业的应用提供了科学的参考依据。酸性电解水在食品行业应用的推广会进一步满足食品安全比较系统化的需求,促进食品行业的高质量发展。
As a kind of safe,effective and environmentally friendly disinfectant,acidic electrolyzed water is widely used in food industry.This study introduces the generating conditions and related characteristics of acidic electrolyzed water,systematically expounds the feasibility,specific methods and attentions of acidic electrolyzed water cleaning and disinfection in the food industry,such as food,food-processing equipment and food-contact articles,practitioners,other articles and environment,and summarizes the relevant standards of acidic electrolyzed water generator.It provides a scientific reference for the application of acidic electrolyzed water in food industry.The application of acidic electrolyzed water in the food industry will further meet the needs of systematic food safety and promote the high quality development of the food industry.
