安顺山药有效成分含量分析及品质综合评价 被引量:4

Content analysis and comprehensive evaluation of effective components in Anshun yam

摘要 以安顺山药为研究对象,与铁棍山药对比分析其有效成分含量,肉和皮的差异性特征,并对其品质进行综合评价。结果表明:安顺山药肉的多糖含量为4.71%,低于铁棍山药肉(11.37%);尿囊素含量和薯蓣皂苷元含量分别为0.95%、0.67%,均高于铁棍山药肉(0.46%、0.49%);黄酮含量为0.26%,与铁棍山药肉(0.27%)相近;安顺山药肉的Ca、Mo、Mg、Zn、Mn元素含量均高于铁棍山药肉;安顺山药皮中多糖、尿囊素、薯蓣皂苷元含量均高于其山药肉中的含量;2种山药综合得分为铁棍山药皮>安顺山药皮>铁棍山药肉≈安顺山药肉。 Taking Anshun yam as the research object,the effective ingredients content and differences between flesh and skin of Anshun yam was analyzed by comparing with Tiebang yam,and its quality com⁃prehensively was evaluated.The results showed that the polysaccharide content of Anshun yam flesh was 4.71%,lower than that of Tiebang yam flesh(11.37%).The contents of allantoin and diosgenin were 0.95%and 0.67%respectively,which were higher than those of Tiebang yam flesh(0.46%and 0.49%).The content of flavonoids was 0.26%,which was close to that of Tiebang yam flesh(0.27%).The content of Ca,Mo,Mg,Zn and Mn in Anshun yam flesh was higher than that in Tie⁃bang yam flesh.The contents of polysaccharide,allantoin and diosgenin in Anshun yam skin were higher than that in Anshun yam flesh.The comprehensive score of the two kinds of yam was Tiebang yam skin>Anshun yam skin>Tiebang yam flesh≈Anshun yam flesh.
