制粉工艺和加工方式对彩色小麦矿物质的影响

摘要 以彩色小麦为研究对象,用X射线荧光光谱法测定小麦中矿物质含量,并分析制粉工艺和加工方式对彩色小麦中矿物质含量的影响。结果表明:与传统制粉工艺相比,脱皮制粉的彩色小麦中钙、锰、铁、锌、碘含量分别提高了24.59%、4.30%、20.68%、98.70%、262.81%;不同加工方式均会造成彩色小麦中矿物质流失,水煮造成黑麦和绿麦矿物质损失最多,达60%以上;油炸造成紫麦矿物质损失最多。脱皮制粉能增加彩色小麦中微量元素含量,同时不会造成重金属含量超标。 Taking colored wheat as the research object,the mineral content in wheat was determined by X⁃ray fluorescence spectrometry,and the effect of milling technology and processing methods on the min⁃eral content in colored wheat were analyzed.The results showed that compared with the conventional milling process,the contents of calcium,manganese,iron,zinc,and iodine in the colored wheat by de⁃branning milling increased by 24.59%,4.30%,20.68%,98.70%,and 262.81%,respectively.Different processing methods could cause mineral loss in colored wheat.Boiling caused the highest miner⁃al loss of over 60%in black wheat and green wheat,and frying caused the most mineral loss in purple wheat.Debranning milling could increase the content of trace elements in colored wheat without causing excessive heavy metal content.
