摘要
三赞胶是我国首个自主研发的鞘氨醇胶,具有良好的成凝胶特性、假塑性、增稠性和乳化活性,在食品添加剂和石油工业等领域具有广泛应用价值。本文系统概述了三赞胶的结构、功能特性、合成机理、发酵生产以及应用领域等方面的最新进展,讨论了三赞胶生产中存在的问题及改进建议,以期为三赞胶的深入研究提供理论支撑,为三赞胶产业的进一步发展提供参考。
Sanxan gum is a novel sphingan,which is the first sphingans independently developed by China.It has wide application in food additive and petroleum industries,due to the excellent gel-forming,pseudoplasticity,thickening,and emulsifying properties.The structure,functional characteristics,synthesis mechanism,fermentation production and application fields of sanxan gum were systematically summarized,and,the problems existing in the production and improvement suggestions were discussed,which provides theoretical support for the further study of sanxan gum and reference for its further development.
