摘要
为探究安康鲊广椒细菌群落结构并发掘其中的乳酸菌,采用纯培养方法及高通量测序技术分析其细菌菌群多样性、功能及相关性。结果表明,鲊广椒中细菌隶属于9个门的106个属,其中乳酸杆菌属(Lactobacillus)占绝对优势。共分离鉴定出25株菌,包括植物乳杆菌(Lactiplantibacillus plantarum)8株,弯曲广泛乳杆菌(Latilactobacillus curvatus)4株,短促生乳杆菌(Levilactobacillus brevis)和清酒广泛乳杆菌(Latilactobacillus sakei)各3株,消化伴生乳杆菌(Companilactobacillus alimentarius)2株及酸鱼联合乳杆菌(Ligilactobacillus acidipiscis)、布氏迟缓乳杆菌(Lentilactobacillus buchneri)、斯比氏促生乳杆菌(Levilactobacillus spicheri)、类肠膜魏斯氏菌(Weissella paramesenteroides)和肠膜明串珠菌(Leuconostoc mesenteroides)各1株。功能分析结果显示,具有氨基酸转运与代谢、碳水化合物运输、代谢及翻译、核糖体结构与生物发生功能的序列均占总序列数的8.0%以上。关联分析结果显示,各细菌属间多为正相关,而乳酸杆菌属和片球菌属与多个细菌属间呈显著负相关(P<0.05)。
In order to analyze the bacterial community structure and explore the lactic acid bacteria of Ankang Zha-Chili,the bacterial community diversity,function and correlation were analyzed by pure culture method and high-throughput sequencing technology.The results showed that the bacteria in Zha-Chili belonged to 106 genera of 9 phyla,among which Lactobacillus was the dominant genus.A total of 25 strains were isolated and identified,including 8 Lactiplantibacillus plantarum,4 Latilactobacillus curvatus,3 Levilactobacillus brevis,3 Latilactobacillus sakei and 2 Companilactobacillus alimentarius.The others were Ligilactobacillus acidipiscis,Lentilactobacillus buchneri,Levilactobacillus spicheri,Weissella paramesenteroides and Leuconostoc mesenteroides.Functional analysis results indicated that the sequences with amino acid transport and metabolism,carbohydrate transport,metabolism and translation,ribosome structure and biogenesis accounted for more than 8.0%of the total sequences.The results of correlation analysis showed that most of the bacterial genera were positively correlated,while Lactobacillus and Pediococcus were significantly negatively correlated with many bacterial genera(P<0.05).
