合肥市民梨果消费偏好研究

Study on Consumption Preference of Pear Fruit in Hefei City of China

摘要 目的:明确合肥市不同特征的居民的梨果消费习惯和偏好,为育种者提供参考。方法:在合肥市发放电子问卷,回收后用SPSS、Excel对数据进行统计分析。结果:合肥市民最喜爱的梨果品种是‘砀山酥梨’和‘库尔勒香梨’;能接受的最高价格为10元/kg,并认为品质更好的果实价格涨幅不应超过2~4元/kg;受教育程度和月收入更高的消费者更愿意为梨果支付较高的价格;甜味、质地酥脆、口感细腻、多汁、风味和香气浓郁是受喜爱的产品属性,而涩味、酸味、质地软、有机械伤、果面锈斑等属性不受青睐;女性和年轻的消费者更注重果实的品质;新型冠状病毒疫情对多数消费者的购买行为没有产生明显影响,但55岁及以上的老年消费者受其影响较大。结论:消费者的性别、年龄、受教育程度、月收入均在不同程度上对消费习惯或消费偏好有所影响。 【Objective】 To investigate consumption habits and consumption preferences to promote the pear consumption and benefit the further development of pear industry.【Method】The data were statistically analyzed using SPSS and Excel,and Mann-Whitney U test and Duncan’s Multiple-Range test. 【Result】The most popular cultivar bought by the consumers was‘Dangshan Suli’,followed by‘Korla Xiangli’. Most of the interviewees could accept the pear price of up to 10 Yuan/kg,and would like to buy better quality pear fruits with extra price of less than 2—4 Yuan/kg. During the pandemic of COVID-19,a few consumers especially elderly consumers aged 55 and above reduced their purchase of pears because of reduced outdoor moving,but most consumers were not impacted. As for fruit attributes and consumer preferences,sweetness,crispness,delicate taste,juiciness,rich flavor and aroma were favored by consumers,but astringency,sourness,mealiness,mechanical injuries,and russet were not liked by consumers. Most interviewees pay more attention to quality than price. In terms of the relationship between consumer characteristics and consumption habits and consumption preferences,consumers with higher educational attainment and higher income level are more willing to pay higher prices for pears. Female and young consumers pay more attention to the quality of fruits. 【Conclusion】The gender,age,educational attainment and monthly income of consumers all have influences on consumption habits or consumption preferences to different degree.
