摘要
羊乳作为一种新兴乳制品,因其全面的营养价值与独特的保健功能越来越受到人们的青睐。羊乳中掺入牛乳的掺假鉴别是目前乳品行业质量控制的难题之一,其对保障乳品营养健康和质量安全具有重要意义。重点综述了目前国内外现有的羊乳中掺入牛乳的鉴别技术,旨在为进一步完善检测技术体系提供参考。
As an emerging dairy product,goat milk is more and more favored for its comprehensive nutritional value and unique health care function.The adulteration identification of cow milk is one of the difficult problems in quality control in the dairy industry,which is of great significance to ensure the safety of dairy products.This paper focused on reviewing the existing identification technology of goat milk mixed with cow milk at home and abroad,aimed to provide a reference for further improving the detection technology system.
