摘要
川法小曲白酒属小曲清香型白酒在四川地区具有十分悠久的发展历史,与其他酒种有较大差别。该酒种制作工艺具有独特优势,在制酒原料、用曲类型及制酒香型方面均具备自身个性,与其他香型不同。研究了该酒种的高级醇、酸、醛等风味物质,探究了其香型特征,确定了各类物质组成成分。
Sichuan Xiaoqu Baijiu belongs to Xiaoqu delicate flavor Baijiu with a very long history of development in Sichuan, which is quite different from other liquors. The production process of this wine has unique advantages. It has its own personality in terms of wine making materials, types of koji and flavor types, which is different from other flavor types. In this paper, the higher alcohols, acids, aldehydes and other flavor substances of the wine were studied, the flavor characteristics were explored, and the composition of various substances was determined.
