摘要
为了明确不同晾晒烟品种的综合品质差异,以黑龙江晒红烟、昆烟碎三(烤烟原料)、会泽旱烟、长沙宁乡寸三皮、蒙自刀烟、天登烟为研究对象,对不同品种烟叶的化学指标、致香成分、感官质量进行了比较分析。结果表明:晾晒烟的总植物碱以及总氮含量整体偏高,水溶性糖含量偏低,昆烟碎三与蒙自刀烟的化学指标整体上较为接近,水溶性糖含量都较高,会泽旱烟的水溶性糖含量最低;晾晒烟的致香成分总量整体偏高,长沙宁乡寸三皮的美拉德反应产物、质体色素产物总量最高,天登烟的类西柏烷类降解产物总量最高,苯丙氨酸类产物总量则是旱烟最高,其中,苯乙醛含量明显高于其他5个品种,昆烟碎三的新植二烯含量最高;晾晒烟的香气量适中,劲头除黑龙江晒红烟以及长沙宁乡寸三皮偏小外,其他晾晒烟均偏大,天登烟的香气量较足,劲头适中偏大,旱烟的香气量充足,口腔略有残留,刺激性较大,香气丰富性较好,劲头较大。从晾晒烟与烤烟配伍性来看,旱烟、长沙宁乡寸三皮、黑龙江晒红烟原料适合用于开发晾晒烟特征明显且舒适性较好的再造烟叶产品;而刀烟、天登烟原料适合用于开发传统烤烟型且丰富性好的再造烟叶产品。
In order to make clear the comprehensive quality difference of different sun-cured tobacco varieties,sun-cured tobacco from Heilongjiang,dried tobacco from Kunming,dried tobacco from Huize,dried tobacco from Changsha,dried tobacco from Ningxiang County,tobacco from Mengzidao and tobacco from Tiandeng were used as test materials,and the chemical indexes,aroma components and sensory quality of different varieties were compared and analyzed.The results showed that the content of total alkaloid and total nitrogen of sun-cured tobacco was on the high side,while the content of water-soluble sugar was on the low side.The chemical index of Kunyansuisan was close to that of Mengzidao tobacco.The content of water-soluble sugar was higher,and the content of water-soluble sugar was the lowest.The total amount of aroma components of sun-cured tobacco was on the high side.The total amount of Maillard reaction products and plastid pigment products were the highest in Cunsanpi,Changsha,and the total amount of cephane-like degradation products was the highest in Tiandeng tobacco.The total amount of L-phenylalanine products was the highest in dry-cured tobacco,and the content of phenylacetaldehyde was obviously higher than that of the other five varieties.The content of neophydiene was the highest in Kunyansuisan,and the aroma of dried smoke was moderate.Except jintou of Heilongjiang sun-cured Red Tobacco and Changsha Cunsanpi was small,other suncured tobacco varieties were on the larger side,Tiandeng tobacco had more aroma,and jintou was moderate.Dry tobacco had more aroma,mouth slightly residue,more irritation,better aroma richness and a lot of energy.According to the compatibility of sun-cured tobacco and flue-cured tobacco,dry-cured tobacco,Cunsanpi and Heilongjiang sun-cured tobacco were suitable for developing reconstituted tobacco with obvious characteristics and better comfort.The raw materials of Dao tobacco and Tiandeng tobacco were suitable for developing the traditional flue-cured tobacco products with good richness.
