摘要
甾醇是含有羟基的类固醇,植物甾醇是植物细胞膜的重要组成部分,广泛存在于植物组织中,所有来源于植物种子的植物油均含有甾醇。因此,植物油是植物甾醇含量最高的食物,是人类植物甾醇获得的最主要途径之一。植物甾醇能够有效降低胆固醇的吸收,维持胆固醇平衡,保护心脑血管健康。添加甾醇类化合物和改进生产工艺生产高甾醇植物油成为食用油生产的一个增长点。本文概述了植物甾醇的种类和生物功能,分析了影响植物油甾醇含量的因素和甾醇植物油生产中存在的问题,并提出相应的改进措施。
Sterols are steroids containing hydroxyl groups.Phytosterols are widely found in plant tissues and are an important component of plant cell membranes.All vegetable oils derived from plant seeds contain sterols.Vegetable oil is the food with the highest content of plant sterols and is one of the most important foodborne sources of human plant sterols.Phytosterols can effectively reduce the absorption of cholesterol,maintain cholesterol balance,and protect cardiovascular and cerebrovascular health.Adding sterol compounds and improving production technology to produce high sterol vegetable oil has become a growth point of edible oil production.This paper summarizes the kinds and biological functions of phytosterols,analyzes the factors affecting the content of phytosterols in vegetable oils and the problems in the production of sterol vegetable oils,and puts forward corresponding improvement measures.
