摘要
武夷岩茶炭焙工艺历史悠久,技艺精湛。其中,打焙是武夷岩茶传统炭焙过程中必不可少的环节,技术要求高,与焙茶品质密切相关。文章阐述了打焙对充分发挥武夷岩茶独有品质的重要意义,梳理了打焙的概念、目的、工具、准备工作及其技术要领,呈现打焙各层面的细节与奥妙之处,为深入认识武夷岩茶制作技艺作为国家级非物质文化遗产的独特之处提供参考。
Wuyi Rock Tea has a long history and excellent skills in charcoal baking technology.Among them,Dabei(Preparation process of carbon fire)is an indispensable processing of traditional charcoal baking ofWuyi Rock Tea,which has high technical requirements and is closely related to the quality of baking tea.This paper expounded the concept,purpose,tools,preparations and technical essentials of Dabei,and presented the details and mysteries of Dabei at all levels.The importance of Dabei to the unique quality of Wuyi Rock Tea was also introduced.In summary,it provided a reference for further understanding the uniqueness ofWuyi Rock Tea processing techniques as a national intangible cultural heritage.
