摘要
目的:了解上海市虹口区市售小龙虾中总汞和总砷的含量及污染水平。方法:在上海市虹口区农贸市场、水产行和大型商超随机抽取不同品种来源的小龙虾样品,按照《2019年国家食品污染和有害因素风险监测工作手册》检测总汞和总砷的含量,根据《食品安全国家标准食品中污染物限量》(GB 2762—2017)评估小龙虾超标的情况,并运用单因子污染指数评价小龙虾中总汞和总砷的污染程度。结果:共采集50份小龙虾样本,汞和砷含量的中位数分别为60.05μg·kg和0.116 5 mg·kg,平均含量分别为57.6μg·kg和0.117 mg·kg,检出率100%,合格率100%,均为一级产品。结论:上海市虹口区市售小龙虾中汞和砷的总体污染水平不高,但小龙虾对砷的富集能力更强,应加强该方面的监管力度。
Objective: To understand the content and contamination level of total mercury and arsenic in commercial crayfish in Hongkou district of Shanghai. Method: Samples of crayfish from different sources were randomly selected from agricultural markets, aquaculture banks and supermarkets in Hongkou district of Shanghai. Detection of total mercury and total arsenic content in accordance with the 2019 National Food Contamination and Harmful Factors Risk Monitoring Workbook. The exceeding standard situations of crayfish were assessed in accordance with the GB 2762—2017. The contamination levels of total Hg and total As in crayfish were evaluated by single factor contamination index method. Result:A total of 50 crayfish samples were collected. The median concentrations of mercury and arsenic were 60.05 μg·kgand 0.116 5 mg·kg. The average contents were 57.6 μg·kgand 0.117 mg·kg. The detection rate was 100%, qualified rate was 100% and all samples were primary products. Conclusion: The overall contamination level of mercury and arsenic in crayfish in Hongkou district of Shanghai is not high. However, the enrichment ability of arsenic in crayfish is stronger, and the supervision on this aspect should be strengthened.
