摘要
以玉米皮为原料,采用猴头菌固态发酵的方式生物改性玉米皮可溶性膳食纤维(soluble dietary fiber,SDF),研究猴头菌接种量、培养温度和培养时间对玉米皮可溶性膳食纤维含量的影响,通过单因素试验和响应面试验优化得到的最优工艺条件为接种量8%、培养温度25℃、培养时间7 d,该条件下实测玉米皮可溶性膳食纤维含量为(8.39±0.14)g/100 g。通过研究发酵前后玉米皮可溶性膳食纤维的吸附特性发现,发酵后玉米皮可溶性膳食纤维的亚硝酸盐吸附能力、胆固醇吸附能力和胆酸盐吸附能力均有所提高。
The soluble dietary fiber(SDF)in corn husk was biologically modified by solid-state fermentation with Hericium erinaceus. The effects of H. erinaceus inoculation amount,fermentation temperature,and fermentation time on the content of SDF in corn husk were investigated. The conditions were optimized by single-factor tests and response surface methodology as fermentation at the inoculation amount of 8% and 25 ℃for 7 days. Under the optimum conditions,the measured SDF content was(8.39 ± 0.14)g/100 g. The adsorption capacity of the SDF after fermentation for nitrite,cholesterol,and cholate significantly increased compared with that before fermentation.
