摘要
肉和肉制品是人类饮食结构中最重要的一部分,在中国千年的饮食文化中扮演着重要的角色。目前国内肉制品行业发展仍处于初级阶段。从肉制品行业的层面上来看,存在三方面的问题:一是企业发展水平参差不齐;二是行业内供应链整合度低;三是行业安全问题亟待解决。从肉制品产品本身的角度上来看,存在二个方面的问题:一是产品的口感和风味过度依赖食品添加剂;二是市场上以高糖、高盐产品为主,对国民健康有不益的影响。通过分析当前肉制品的行业现状和存在的主要问题,阐述了国内肉制品发展的趋势:一是健康化备受消费者青睐;二是低温冷冻肉制品比重逐步增大,未来可占据主导地位;三是便捷式预制品肉制品趋于餐饮化;四是肉制品休闲化市场前景广阔。本文旨在为高质量发展优质的肉类产品提供思路。
Meat and meat products were the most important part of the human diet structure andthey played an important role in China's millenniumdiet culture.At present,the development of domestic meat products industry was still in its infancy.From the perspective of the meat industry,there were three problems:first,the level of enterprise development was uneven;second,the integration of supply chain in the industrywas low;third,the industry safety problems needed to be solved urgently.From the perspective of the meat productsthemselves,there were two problems:first,the taste and flavor of the productwereoverly dependent on food additives;second,the market was dominated by high-sugar and high-salt products,and it had a negative impact on national health.By analyzing the current situation of the meat products industry and the main problems,the development trend of domestic meat products was expounded:first,health was favored by consumers;second,the proportion of low-temperaturefrozen meat products wasgradually increasing,and it could dominate in the future;third,convenient prefabricated meat productstended to be catering;fourth,the meat products leisure market had broad prospect.It provided ideas for the high quality development of high quality meat products.
