摘要
【目的】探明扬州鹅及其杂交后代生长及屠宰性能和肉品质的差异,为扬州鹅及其杂交配套系的培育、开发和利用提供理论依据。【方法】以扬州鹅、莱扬鹅、溆扬鹅、皖扬鹅和浙扬鹅为研究对象,分别测定5组试验鹅群的生长性能(0-10周龄)、10周龄屠宰性能及肉品质。【结果】公母鹅群体中,扬州鹅组初生重显著高于莱扬鹅和溆扬鹅组,与皖扬鹅和浙扬鹅组间差异不显著;2周龄时,扬州鹅组的体重显著低于其他组;4周龄、6周龄、8周龄和10周龄时,均以皖扬鹅组体重最高;10周龄时,皖扬鹅组平均体重较纯种扬州鹅组高约300 g。所有杂交组合的屠宰率和全净膛率均高于标准值(屠宰率80%,全净膛率60%),且公鹅的肉用性状总体优于母鹅。除浙扬鹅组外,其他杂交组合的胸肌和腿肌的失水率均比扬州鹅组低,以莱扬鹅组最低。【结论】扬州母鹅与不同品系父本鹅的杂交后代比纯种后代的生长性能更具优势,肌肉水分含量高,质地较好,加工时出品率高;商品生产的最优杂交组合为皖扬鹅,肉产品加工的最优杂交组合为莱扬鹅。
【Objective】In order to find out the differences in growth performance,slaughter performance and meat quality of Yangzhou goose and their hybrid progeny,and to provide a theoretical basis for the cultivation,development and utilization of Yangzhou goose and their cross-breeding series.【Method】Taking Yangzhou goose,Laiyang goose,Xuyang goose,Wanyang goose and Zheyang goose as research objects,the growth performance(0-10 weeks old),slaughter performance and meat quality of 5 groups of goose(10 weeks old)were measured respectively.【Result】Among male and female goose groups,the birth weight of Yangzhou goose group was significantly higher than that of Laiyang goose group and Xuyang goose group,but not significantly different from that of Wanyang goose group and Zheyang goose group.At 2 weeks of age,the body weight of Yangzhou goose group was significantly lower than other groups.At the age of 4,6,8 and 10 weeks,the weight of the Wanyang goose group was the highest.At the age of 10 weeks,the average body weight of the Wanyang goose group was about 300 g higher than that of the purebred Yangzhou goose group.The slaughter rate and total evisceration rate of all hybrid combinations were higher than the standard values(80%slaughter rate and 60%complete evisceration rate),and the meat traits of male goose were generally better than that of female goose.Except for the Zheyang goose group,the water loss rates of the breast and leg muscles of the other cross-breeding group were lower than those of the Yangzhou goose group.The hybrid offspring of the male parent goose have higher muscle moisture content,better texture and higher yield during processing than the purebred offspring.【Conclusion】The growth performance of the hybrid combination of female Yangzhou goose and other male goose from other variety has more advantages in growth performance,have higher muscle moisture content,better texture and higher yield during processing than the purebred offspring.The optimal hybrid combination for commercial production
