摘要
文章通过企业调研和第三方检测公司走访的方式,找到预包装柳州螺蛳粉所有检测项目中可能不合格的关键危害,分别是霉菌、金黄色葡萄球菌、沙门氏菌和副溶血性弧菌。采集预包装柳州螺蛳粉16个批次,针对这四个项目开展实验,得到16组数据,其中3批螺蛳粉的霉菌总数超标,金黄色葡萄球菌、沙门氏菌、副溶血性弧菌合格,另外13批螺蛳粉的霉菌、金黄色葡萄球菌、沙门氏菌、副溶血性弧菌均合格。由此得知,霉菌是柳州螺蛳粉质量安全的关键危害。针对这一关键危害,文章分析与探讨预包装柳州螺蛳粉中霉菌超标的关键因素及有效防控措施,有利于建立健全柳州螺蛳粉质量安全体系,规范企业安全生产。
Through enterprise research and visits of third-party testing companies, this paper finds out the key hazards that may fail in all testing items of prepackaged Liuzhou Luosifen, namely mold, Staphylococcus aureus,Salmonella and Vibrio parahaemolyticus. 16 batches of prepackaged Liuzhou Luosifen were collected. Experiments were carried out for these four projects, and 16 groups of data were obtained. Among them, the number of molds in3 batches of snail powder exceeded the standard, Staphylococcus aureus, Salmonella and Vibrio parahaemolyticus were qualified, and the molds, Staphylococcus aureus, Salmonella and Vibrio parahaemolyticus in 13 batches of snail powder were qualified. Therefore, mold is the key hazard to the quality and safety of Liuzhou Luosifen. In view of the key harm of mold, the key factors of exceeding the standard of mold in prepackaged Liuzhou Luosifen and effective prevention and control measures are analyzed and discussed, which is conducive to establish and improve the quality and safety system of Liuzhou Luosifen and standardize the safety production of enterprises.
