摘要
为提高河蚬资源的综合利用,促进河蚬盐溶蛋白在肉制品加工中的应用,优化河蚬中盐溶蛋白的提取工艺,并以持水性、持油性、起泡性能、乳化性能等为检测指标,评价其加工特性。结果表明:NaCl浓度为0.5 mol/L、pH8.0、固液比1∶6(g/mL)时浸提25 h,河蚬盐溶蛋白得率可达13.7%,高于鲢鱼、鳕鱼、河蚌等水产资源。通过功能特性的测定发现,河蚬盐溶蛋白的最佳持水性为2.41 g/g;持油性最大可达3.16 mL/g,起泡性和泡沫稳定性分别为67.8%、65.7%;乳化性和乳化稳定性分别为56.8%和94.5%。其中,各温度下的持油性均优于大豆分离蛋白,而起泡性能稍弱。综上,河蚬盐溶蛋白含量较高,加工性能较优,该研究可为其高值化利用提供理论依据。
The extraction of salt-soluble protein was optimized to improve the comprehensive utilization of Corbicula fluminea resource and promote the application of Corbicula fluminea salt-soluble protein in meat processing.Its processing properties were evaluated with water and oil holding capacity,and foaming and emulsifying performance.The results showed that when NaCl concentration was 0.5 mol/L,pH was 8.0,solid-liquid ratio was 1∶6(g/mL),and leaching time was 25 h,the yield of salt soluble protein was 13.7%,which was higher than that of silver carp,cod,mussel,and other aquatic resources.Water holding capacity was 2.41 g/g,oil holding capacity was up to 3.16 mL/g,foaming and foam stability were 67.8%and 65.7%,respectively,and emulsifying property and emulsifying stability were 56.8%and 94.5%,respectively.The oil holding capacity was better than that of soybean protein isolate at all temperatures,while the foaming performance was weaker.In conclusion,Corbicula fluminea has a high content of salt-soluble protein and excellent processing performance,which provides a theoretical basis for its high-value utilization.
