摘要
目的 调查果蔬制品中交链孢酚、交链孢酚单甲醚、交链孢菌酮酸和腾毒素等4种交链孢毒素的污染状况,评估其对人群健康的风险。方法 从河南5个地区的3种场所采集番茄制品、葡萄酒和橄榄油等3类果蔬样品,采用同位素稀释-液相色谱-串联质谱法检测其4种交链孢毒素的含量,统计分析3类果蔬样品中4类交链孢毒素的污染状况,并采用毒理学关注阀值(threshold of toxicological concern,TTC)方法评估3类果蔬制品中的膳食暴露风险。结果 番茄制品、葡萄酒、橄榄油样品的交链孢毒素检出率分别为92.5%(37/40)、80.0%(24/30)、93.3%(28/30),污染水平分别为0.50~126.12μg/kg、0.10~3.87μg/kg、0.05~14.10μg/kg。3种果蔬制品中交链孢毒素暴露水平均低于TTC值。结论番茄制品、葡萄酒、橄榄油中交链孢毒素存在不同程度的污染,但是总体污染水平不高,对人群健康的风险很小。
Objective To investigate the contamination of alternaiol,alternariol monomethylether,tenuazonic acid,tentoxin in fruit and vegetable products,and assess the risk to the health of population.Methods Samples of tomato products,wine,and olive oil from five areas and three procurement channels in Henan province were collected.The four kinds of alternaria toxins in the samples were detected by using isotope-dilution ultra-high-performance liquid chromatography-tandem mass spectrometry method.The contamination status of the four types of alternaria toxins in the three types of fruit and vegetable samples was statistically analyzed.The health risk of alternaria toxins in 3 kinds of fruit and vegetable products was evaluated based on the threshold of toxicological concern(TTC) method.Results The detection rates of alternaria toxins in tomato products,wine and olive oil were 92.5%(37/40),80.0%(24/30) and 93.3%(28/30),respectively.Contamination levels of alternaria toxins in tomato products,wine and olive oil were 0.50-126.12 μg/kg,0.10-3.87 μg/kg,and 0.05-14.10 μg/kg,respectively.The dietary exposure of alternaria toxins in 3 kinds of fruit and vegetable products were lower than the TTC value.Conclusion There were different degrees of contamination of the four kinds of alternaria toxins in tomato products,wine and olive oil,but the level of contamination was not high,and the risk to the health of population was very low.
