摘要
通过静电纺丝技术制备了负载不同多酚的ε-聚赖氨酸/聚天冬氨酸-玉米醇溶蛋白静电纺丝膜,并分析了纤维膜溶胀特性和多酚生物活性变化。结果表明,所制备的纤维膜对山奈酚、单宁酸和褐藻多酚的包埋率均在80%以上,纤维膜在模拟胃液中溶胀率低,进入模拟肠液后负载的多酚开始大量释放,而在模拟结肠液中释放量趋于稳定,说明此纺丝膜能够保护多酚达到消化道特定位置。负载不同多酚的纤维膜对大肠杆菌和金黄色葡萄球菌有明显的抑制效果,DPPH、ABTS+自由基清除能力分析结果表明此纤维膜能够保持多酚的抗氧化活性,且此纤维膜对亲水性多酚的包埋效果强于疏水性多酚。
ε-polylysine/polyaspartic zein electrospinning film loaded with different polyphenols was prepared by electrospinning technique,and its swelling property and biological activity was investigated.The result showed that the embedding ratio of electrospinning film for tannic acid,kaempferol,brown algae polyphenols were all above 80%.The swelling ratio of the fiber film was low in the simulated gastric fluid,and the polyphenols loaded on the fiber film began to release in a large amount after entering the simulated intestinal fluid,while the release amount tended to be stable in the simulated intestinal fluid,indicating that the spinning film could protect polyphenols to a specific location in the digestive tract.The fiber film loaded with different polyphenols had obvious inhibitory effect on EScherichia coli and Staphylococcus aureus.DPPH and ABTS+radical scavenging ability analysis showed that the film could maintain the antioxidant activity of polyphenols,The embedding effect of the fiber film on hydrophilic polyphenols was stronger than that of hydrophobic polyphenols.
