摘要
以高寒地区常见的酿酒葡萄品种威代尔、北冰红、贝达、卡它巴为原料,采用传统酒庄酒工艺酿制出酒庄葡萄酒,检测其基本理化指标、酚类含量、抗氧化活性和卫生指标,分析并确定了高寒地区酒庄葡萄酒酿造工艺酿制出来的酒庄酒的基本特性:卫生指标符合国家标准;符合干酒标准;酸度较高;具有该品种的特色果香及酒香,地方特色浓郁。
The common wine grape varieties in cold areas(Vidal,Beibinghong,Beta and Catawba)were used as the raw materials to make wine by traditional chateau wine technology.The basic physical and chemical indexes,phenol contents,antioxidant activities and sanitary indexes of the produced wines were analyzed.The results showed that the chateau wines in cold areas all met the national sanitary standards and the standards for dry wines;the wines had high acid contents;each wine product had the characteristic aroma of its variety,as well as strong local characteristics.
