甘孜州四个绵羊群体的屠宰性能及肌肉品质研究 被引量:2

摘要 为了摸清四川省甘孜藏族自治州绵羊群体的生物学特性,选择了玛格绵羊、勒通绵羊、贡嘎绵羊和扎溪卡绵羊等群体,每群体随机选择周岁公、母羊各10只,共计80只,进行屠宰,测定相应的屠宰指标及肌肉品质指标。结果表明:1)玛格绵羊公、母羊周岁体重分别为19.96±4.05kg和15.63±2.84kg,扎溪卡绵羊分别为38.13±6.30kg和32.33±5.06kg,勒通绵羊分别为32.27±4.85kg和26.41±5.2kg,贡嘎绵羊分别为34.17±4.11kg和25.52±2.24kg;2)玛格绵羊周岁公、母羊屠宰率分别为45.15±2.69%和45.61±1.98%,净肉率分别为34.51±2.07%和33.72±1.79%,贡嘎绵羊屠宰率分别为45.00±1.10%和44.64±3.95%,净肉率分别为33.91±1.56%和31.81±3.48%,勒通绵羊屠宰率分别为47.02±1.72%和47.80±2.31%,净肉率分别为35.95±1.37%和36.07±2.68%,扎溪卡绵羊屠宰率分别为46.69±0.95%和46.68±2.44%,净肉率分别为35.77±2.73%和35.44±0.69%;3)玛格绵羊公、母羊肌肉熟肉率分别为66.15±1.73%和65.36±2.03%,眼肌面积分别为9.29±2.01cm^(2)和7.47±1.15cm^(2),贡嘎绵羊熟肉率分别为65.03±1.68%和64.73±2.32%,眼肌面积分别为12.91±0.42cm^(2)和12.26±0.60cm^(2),勒通绵羊公、母羊熟肉率分别为65.29±5.97%和64.30±1.77%,眼肌面积分别为14.77±3.35cm^(2)和12.62±3.23cm^(2);扎溪卡绵羊公、母羊熟肉率分别为65.99±3.71%和64.71±4.90%,眼肌面积分别为14.28±3.01cm^(2)和12.37±3.32cm^(2)。该次试验,首次获得了甘孜州四个绵羊群体的屠宰及肌肉品质方面的基础数据,为进一步挖掘这些群体奠定基础。 In order to explore the slaughter performance and meat quality of the native sheep populations in Ganzi Prefecture, we have randomly slaughtered 40 ewes and 40 rams in Mage sheep, Gongga sheep, Letong sheep and Zaxika sheep with twelve-months-old, and determined the corresponding index of slaughter and meat quality.The results show that: 1) The weight of male and female of Mage sheep were 19.96±4.05 kg and 15.63±2.84 kg, Zaxika sheep were 38.13±6.30 kg and 32.33±5.06 kg, Letong sheep were 32.27±4.85 kg and 26.41±5.2 kg. Gongga sheep were 34.17±4.11 kg and 25.52±2.24 kg, respectively.2) The slaughter rates of male and female of Maga sheep were 45.15±2.69% and 45.61±1.98%,Gongga sheep were 45.00±1.10% and 44.64±3.95%,Letong sheep were 47.02± 1.72% and 47.80± 2.31%,Zaxika sheep were 46.69±0.95% and 46.68±2.44% respectively.The net meat rates of male and female of Maga sheep were 34.51±2.07% and 33.72±1.79%,Gongga sheep were 33.91± 1.56% and 31.81± 3.48%,Letong sheep were 35.95± 1.37% and 36.07± 2.68%,Zaxika sheep were 35.77±2.73% and 35.44±0.69%,respectively.3) The cooked meat rates of male and female of Mage sheep were 66.15± 1.73% and 65.36± 2.3%,Gongga sheep were 65.03± 1.68% and 64.73± 2.32%,Letong sheep were 65.29±5.97% and 64.30±1.77%,Zaxika sheep were 65.99± 3.71% and 64.71± 4.90%,respectively.The eye muscle area of male and female of Mage sheep were 9.29±2.01 cm^(2) and 7.47±1.15 cm^(2),Letong sheep were 14.77±3.35 cm;and 12.62±3.23 cm^(2),Gongga sheep were 12.91±0.42 cm^(2) and 12.26±0.60 cm^(2),zaxika sheep were 14.28±3.01 cm^(2) and 12.37±3.32 cm^(2),respectively.In this experiment, the basic data of slaughter and muscle quality of four sheep populations in Ganzi Prefecture were obtained for the first time, laying a foundation for further exploring these populations.
