摘要
与传统的冷链业态单一发展方向不同,冷链新业态将不同的产业整合到一起,实现产业间的深度融合,是近年来冷链物流组织形式及经营方式的一大创新。冷链物流由于其配送产品的特殊性,“断链”现象时有发生,特别是发生在“最后一公里”的配送上,克服供应链末端瓶颈问题是冷链行业供给侧结构性改革下的关键。因此,在冷链新业态中,完善的末端配送网络尤为重要。文章将中央厨房作为研究冷链新业态的对象,通过分析中央厨房运营模式及配送特点,结合其经营效益和长远发展,构建数字经济背景下的中央厨房末端配送网络,提高城市冷链配送集约化、现代化水平。
Unlike traditional single development direction of the cold chain industry,the new cold chain industry integrates different industries together to achieve a deeper integration between industries,which is a major innovation in the organization and operation of cold chain logistics in recent years.Due to the special nature of cold chain logistics,the phenomenon of“broken chain”occurs from time to time,especially in the“last mile”of delivery.Therefore,in the new cold chain industry,a perfect end of the distribution network is particularly important.This paper takes central kitchens as the object of research on the new cold chain industry,analyses the operation mode and distribution characteristics of central kitchens,combines their operational efficiency and long-term development,builds a central kitchen end distribution network in the context of the digital economy,and improves the level of urban cold chain distribution intensification and modernisation.
