摘要 由于大豆蛋白和植物多酚具有较好的功能特性与生物活性特点,二者结合的研究已成为一大热点。蛋白质与多酚可以通过非共价或共价相互作用的方式发生结合,进而影响大豆蛋白和植物多酚的性质。文中介绍了大豆蛋白与多酚的相互作用机理、影响相互作用的因素以及相互作用对大豆蛋白与多酚的结构和功能的影响,并介绍了常用表征蛋白质与多酚相互作用的分析方法,旨在为大豆蛋白与多酚相互作用及大豆蛋白-多酚复合物在食品中的应用研究提供理论指导。 Since soybean protein and plant polyphenol had good functional properties and biological activity,the combination of protein and polyphenols had become a hot topic.Protein and polyphenols could be combined by non-covalent or covalent interactions,which in turn affect the properties of soybean protein and plant polyphenols.In this paper,the interaction mechanism of soybean protein and polyphenol,the factors affecting the interaction and the effects of the interaction on the structure and function of soybean protein and polyphenol were introduced,and the commonly used analytical methods characterizing the interaction of protein and polyphenol were also introduced,aiming to provide theoretical guidance for the research on the interaction of soybean protein and polyphenol and the application of soybean protein-polyphenol complex in food.
