果实能量代谢与采后品质关系的研究进展 被引量:6

Research Progress on the Relationship Between Fruit Energy Metabolism and Quality Deterioration of Fruit

摘要 果实采收后,其内部仍进行着能量代谢和其他各种代谢活动。研究表明,能量代谢水平和能量状态与采后果实品质变化、病害发生、胁迫响应等有重要关系,能量代谢主要通过干扰果实呼吸作用、活性氧代谢、激素水平、抗病系统等途径发生作用。本研究从外观品质、内在品质、果实衰老与腐烂、冷害发生、病害应答机制、能量代谢的分子调控等几个方面阐述国内外有关果实能量代谢与品质劣变的关系,以期为基于能量代谢调控的保鲜技术的应用提供理论依据和参考。 Energy metabolism and other metabolic activities are still going on for the postharvest fruit.Fruit energy metabolism has critical relationships with quality change,disease occurrence and stress response of postharvest fruits.Respiratory action,reactive oxygen metabolism,hormone level,disease resistance system are all involved in the energy metabolism of fruits.In this study,the relationship between fruit energy state and quality deterioration at home and abroad was reviewed from the aspects of appearance quality,internal quality,fruit senescence,occurrence of chilling injury,postharvest diseases,molecular regulation,and so on.It would provide theoretical basis for the application of fresh-keeping technology of fruits based on energy metabolism regulation.
