淹水对采收期赤霞珠葡萄主干茎流规律及品质的影响

摘要 试验以5年生酿酒葡萄赤霞珠(Cabernet sauvignon)为试材,采用田间模拟淹水处理的方法,设置淹水3、6、9、12、24、48 h共6个处理,以淹水0 h为CK,系统探究了淹水对采收期赤霞珠葡萄主干茎流规律及品质的影响。结果表明,淹水导致赤霞珠葡萄主干茎流速率和单株茎流量响应敏感性下降、峰值降低、变化趋势整体推后,且在夜间存在明显且有规律的反向茎流现象。随着淹水后时间的推移,赤霞珠葡萄浆果横纵径、百粒重显著增加,果形指数总体呈现缓慢下降的波动趋势,各处理间差异不显著。淹水9 h,赤霞珠葡萄浆果可溶性固形物、总酸、总花色苷、单宁及总酚含量均呈显著下降趋势,淹水48 h,赤霞珠葡萄浆果可溶性固形物恢复了103.66%、总酸恢复了91.19%、总花色苷恢复了111.33%、单宁恢复了97.45%、总酚恢复了90.60%。由此可知,淹水在一定程度上抑制了赤霞珠葡萄主干茎流速率和单株茎流量,导致其启动时间推后、响应敏感性下降、峰值降低、变化趋势整体推后3 h。淹水9 h,赤霞珠葡萄浆果可溶性固形物、总酸、总花色苷、单宁及总酚含量均呈现出显著下降的趋势,淹水48 h,浆果内含物含量总体恢复了9成以上,其中,单宁及总酚对淹水的响应更迅速,恢复更缓慢。建议葡萄园在淹水后9 h内或48 h后采收对浆果的品质影响相对较小。 The 5-year-old Cabernet sauvignon was used as the test material,the field simulated flooding treatment was set including six levels of 3,6,9,12,24 and 48 h after flooding,and the effects of flooding on stem flow and quality of Cabernet sauvignon during harvest were studied systematically.The results showed that as a result of flooding,the sensitivity of stem flow rate and stem flow per plant decreased.The peak value reduced.The trend of change was delayed.There was an obvious and regular reverse stem flow phenomenon at night.With the time after flooding,the horizontal and vertical diameter and 100-grain weight of Cabernet sauvignon grapes increased significantly.The overall fruit shape index showed a slow downward fluctuation trend,and there was no significant difference among the treatments.The contents of soluble solids,total acids,total anthocyanins,tannins and total phenols in Cabernet sauvignon berries decreased significantly at 9 h after flooding,and recovered 103.66%of soluble solids,91.19%of total acids,111.33%of total anthocyanins,97.45%of tannins and 90.60%of total phenols at 48 h after flooding.The treatment of flooding inhibited stem flow rate and stem flow per plant of Cabernet sauvignon,which delayed start-up time,decreased response sensitivity,reduced peak value and overall delayed by 3 h.The contents of soluble solids,total acids,total anthocyanins,tannins and total phenols in Cabernet sauvignon grapes decreased significantly at 9 h after flooding,and recovered more than 90%after 48 h.Above all,tannin and total phenol responded more quickly and recovered more slowly to flooding.It was suggested that harvesting within 9 h or 48 h after the flooding of vineyards had relatively little effect on berry quality.
