摘要
甘薯种植面积大、产量高、价格低廉,同时淀粉等生物质含量高,营养丰富,以甘薯为原料通过发酵生产生物质产品得到越来越广泛的关注。但甘薯也有氮含量低、黏度高等特点,给发酵技术带来困难,因此,许多学者开展了相关研究以不断提升甘薯发酵技术水平。从甘薯发酵产品、加工技术要点、技术瓶颈、发展方向等方面进行综述,以期为甘薯的精加工、深加工以及优化甘薯发酵方法提供参考。
Sweet potato has a large planting area, high yield and low price in the world. At the same time, the content of starch and other biomass is high and rich in nutrition. The production of biomass products using sweet potato as raw material through fermentation has been paid more and more attention. However, sweet potato also has the characteristics of low nitrogen content and high viscosity, which brings difficulties to the fermentation technology. Therefore, many scholars have carried out related studies to continuously improve the level of sweet potato fermentation technology. In this paper, sweet potato fermentation products, processing technology points, technical bottlenecks, development direction and other aspects were reviewed, providing theoretical reference for sweet potato finishing, deep processing and optimization of sweet potato fermentation methods.
