摘要
以花生红衣、花生壳为原料,采用微波辅助提取多酚,对花生皮、壳清除DPPH自由基和羟基自由基能力进行对比。结果表明,花生红衣多酚的最佳提取工艺为乙醇体积分数80%,料液比1∶40,微波功率480 W,微波时间40 s,多酚得率为179.20 mg GA/g;花生壳多酚最佳提取工艺为乙醇体积分数为60%,料液比为1∶40,微波功率800 W,微波时间40 s,多酚得率为20.63 mg GA/g;花生红衣的DPPH·和·OH清除能力均优于花生壳,花生红衣和花生壳多酚的当量抗坏血酸分别为131.56±2.20 mg AA/g和6.51±0.71 mg AA/g。该研究的应用将有效提高我国花生皮壳中多酚资源的利用。
Polyphenols were extracted from peanut skin and shell by microwave-assisted extraction process.The optimization of the extraction conditions and the scavenging activities of polyphenols on DPPH·and·OH were studied.The results showed that the optimal extraction conditions for peanut skin were obtained as follows:ethanol volume fraction 80%,solid-liquid ratio 1∶40,water bath temperature 60℃,microwave power 480 W and microwave time 40 s.Under these conditions,the yield of polyphenols from peanut skin was 179.20 mg GA/g.The optimal extraction conditions for peanut shells were obtained as follows:ethanol volume fraction 60%,solid-liquid ratio 1∶40,microwave power 800 W,and microwave time 40 s.Under these conditions,the yield of polyphenols from peanut shells was 20.63 mg GA/g.The DPPH·and·OH free radical scavenging ability of peanut skin were better than peanut shell.The equivalent ascorbic acid(AA)of peanut skin and peanut shell were 131.56±2.20 mg AA/g and 6.51±0.71 mg AA/g,respectively.The application of this study would effectively improve the utilization of peanut skin and shell polyphenols.
