不同烘烤工艺对红花大金元上部烟叶烘烤质量的影响 被引量:8

摘要 为了提高云南大理烟区上部烟叶外观质量、内在品质及工业可用性,解决上部烟叶挂灰重、青杂烟比率高等问题,本试验以红花大金元上部烟叶为材料,研究烟叶烘烤过程中变黄期和定色期湿球温度对烤后上部烟叶质量的影响。结果表明,通过优化烘烤工艺(T3处理),即提高烟叶烘烤过程中主变黄期湿球温度、降低变黄后期及定色前期湿球温度能够降低酶促棕色化反应敏感期烟叶的水分含量,减轻酶促棕色化反应的发生程度,提高上部烟叶的外观质量、中上等烟比率和经济效益,使烟叶内在化学成分更加协调,感官评吸质量更佳,显著提高工业可用性。 In order to solve the problems of heavy ash,high ratio of green and miscellaneous tobacco,and improve the appearance quality,internal quality and industrial availability of upper tobacco leaves in Dali tobacco area,the variety Honghua Dajinyuan was used to study the effects of wet bulb temperature in yellowing period and color fixing period on the quality of flue-cured tobacco.The results showed that by optimizing the curing process(T3 treatment),that was increasing wet bulb temperature at main yellowing stage and reducing wet bulb temperature at later yellowing stage and early color fixing stage,the moisture content of tobacco leaves at sensitive stage of enzymatic browning reaction and the occurrence degree of enzymatic browning reaction could be reduced,while the appearance quality,ratio of medium and high-grade tobacco,and economic benefits could be improved.Under T3 treatment,the internal chemical composition was more coordinated,the sensory evaluation quality was better,and the industrial availability was significantly improved.
