摘要 海参是一种营养丰富的海珍品,多糖是其重要的营养组成部分,具有抗肿瘤、抗氧化、抗凝血等多种生理活性,已成为国内外学者关注的重点和热点。多糖活性与其制备方式密切相关,本文对不同加工方式和提取方法对海参多糖的影响进行了综述,并对发展过程中存在的问题以及发展前景进行了总结和展望,以期为海参多糖的高值化综合开发利用提供理论依据。 Sea cucumber is a nutritious and precious marine product.Polysaccharide is the most important ingredient in sea cumber and it has exhibited various biological functions such as anti-tumor,antioxidant and anti-coagulant activity.Sea cucumber polysaccharide has been drawn attention and become a hotspot in research at home and abroad.However,the polysaccharide activities are closely related with its processing and extraction methods.In this paper,effects of different processing and extraction methods on sea cucumber polysaccharide are summarized.Problems in the current development of sea cucumber industry and perspectives on the future development are analyzed and proposed.The review provides theoretical references for high-value sea cucumber polysaccharide utilization and development in the future.
